International Forum Visits Restaurant

On Saturday, October 15, 2011, members of the International Forum and the school’s Chinese students traveled to Charlottesville to dine at Peter Chang’s China Grill, an authentic Chinese restaurant specializing in Szechuan cuisine, one of China’s four major schools of cuisine characterized by its hot and spicy dishes.
The restaurant is named after its founder, Peter Chang, formerly a personal chef to the President of China. Chang has been dubbed “the elusive chef” because of his frequent migrations to different restaurants since his retirement as chef at the Chinese embassy in Washington, D.C., half a decade ago. Chang’s culinary skill was highly praised by food critics, and his nomadic work style has inspired a group of devout followers who have attempted to track down his whereabouts on the Internet in the past few years.
 
Faced with a selection of more than 150 dishes, the group of twelve carefully chose fourteen dishes to try. Among their picks were Szechuan Double Cooked Pork, boiled pork fried in hot oil after being cut into thin slices, and the famed Szechuan Braised Fish, in which raw fish is poached in boiling water mixed with dried chili and Szechuan pepper, creating a rich scent and distinctive flavor while preserving the tenderness of the meat and freshness of the vegetables.
 
“It's unbelievable how different the food is from the local Chinese food we order at Woodberry. And as a Jamaican of Chinese descent, it was great for me to get my first experience with actual Chinese cuisine,” remarked Damien Chang ’12. The group had an unforgettable experience and gave positive feedback about the authentic food. Nick Workman ’12 commented on the unusual location of the restaurant and its superb food: “It was an easy-to-miss restaurant with hard-to-forget food.”
